We've had it in omelettes, eaten it straight and the other day it was melted on stuffed bell peppers.

Wilapa Hills makes this new for 2009 Little Boy Blue cheese locally. It is fantastic. It is salty, creamy and has a strong start and finish of the rind. If you can track some down, do yourself a favor and buy it.

The bell peppers themselves were stuffed with ground beef, fresh tomatoes, mushrooms, slab bacon, salad onions and a bit of sriracha.
